This week on the blog we have the least depressing recipe in our arsenal: birthday cake cookies. Make these if you have a lot of time to kill, or if you need something to cheer you up.
Another simple lunch idea - couscous salad. You can chuck in leftovers with whatever salad bits you have. This version uses grated carrot and tomatoes, marinated tofu pieces, and a tiny bit of leftover roast chicken. The dressing is simply lemon juice and olive oil, though a bit of plain yoghurt stirred though is also delicious if you have it.
Is panzanella the cure for our lunch lethargy? We made this one with some extremely stale bread, balsamic, and what few tomatoes we had left. Then added toppings, as you can see. The idea of a recipe for panzanella kind of chafes. All you do is mix bread with enough oil and vinegar to soften it up a bit, add some herbs maybe and whatever you’ve got leftover—roast veg, beans, etc. Let it sit. That’s it. It is the most delicious answer to reducing food waste.
For all the disruption that lockdown has brought, it has been weirdly satisfying to see the ingenuity and speed with which some of our favourite local businesses have addressed the crisis. Within days, @geocafeuk in Reading had put together a vegbox scheme and online shop, and the contents of one of their boxes found its way into this butterbean and squash pie.
An unusual but delicious quarantine creation - noodles with a cheese and sweetcorn sauce and a cauliflower cheese croquette topping. Freezer space is at a premium right now and a box of Ellas Kitchen croquettes, purchased months ago to help with rushed weeknight dinners (and which did not help since they were immediately rejected by the target audience) could no longer justify their place. They were made and served up to the adults. The cheese sauce got an extra bit of kick from a leftover sachet of spicy ramen noodle base found lurking at the back of the cupboard. .
Have you run out of flour? Is the shop also out of flour? Can’t get to the shop? Have you also run out of bread? Porridge bread is the answer!
